These Peanut Butter Bites are a super simple snack to always have on hand. 5 simple ingredients. One bowl. Smart snacking that is not only good for you but also satisfies your sweet tooth!

Years ago I used to make a peanut butter bite that had a ton of honey. And while honey can be the carbohydrate/energy source in the bites, I wanted to play around with a combination that would still give protein, healthy fats, but with just a tad less carbs. Carbohydrates are our body’s preferred fuel source and they are healthy and serve a purpose. But if I’m being perfectly honest, it was a lot of honey. I used them as a pre-workout snack many times and they’re perfect for that. However, I wanted a snack that had a few less carbs as I’m still not back to running (post injury).

Teaching kids the other day we had a conversation about how ‘all foods fit’ and that there are no ‘good’ or ‘bad’ foods, that food is just food. 10 year old kids already thinking that they shouldn’t eat carbs and trying to hide their donuts from the dietitian. My hope is that after my class the kids left knowing that yes, food is fuel, but that it’s so much more: cultural, connection, social, and then some. I’m always saying that managing diabetes is not only a science but also an art. Seems nutrition is just that too: science, but also an art.

On to these peanut butter bites. Chock full of healthy fats, a dose of some natural sugar from the dates (turned into a syrup), and a few chocolate chips for fun. They’re a great snack to satisfy the sweet tooth. Make some, freeze some, and maybe even double the recipe, they’re that tasty!

Ingredients: Peanut Butter Bites

  1. Peanut Butter– The natural, drippy one, not the already mixed ones. You can actually use whatever nut butter you have on hand. I love using peanut butter. It’s the cheapest nut/nut butter that provides healthy fats and protein. And with the cost of food prices increasing, I call this a win win!
  2. Almond Flour: A great source of vitamin E, magnesium, and fiber, I used almond flour to help bulk up the bites versus actual flour. This allows for the bites to have an additional source of heart healthy fats & less carbs.
  3. Powdered MilkMany recipes use collagen or a protein powder in their energy bites. Instead, I used something I always have on hand during hurricane season: powdered milk. While I hope to never have to use this powdered milk as actual milk, it’s a great addition to soups, homemade bread, and energy bites like this to increase the protein, naturally. You can use collagen powder if you have that on hand or your favorite protein powder. Simply opting for an ingredient I have and use that is also an actual food item.
  4. Mini Chocolate Chips – Adding mini chocolate chips because regular size would be too big for the bite. And if you want to leave them out, you can, but why would you?
  5. Date Syrup– Maple syrup works here too. Understand that date syrup is more of a unique ingredient and you may not have it on hand. This recipe was tested with both and both work. I’ve been wanting to make homemade date syrup. This is one product I’d recommend buying rather than making. Expensive, but time is money and it takes a long time to simmer down to a syrup. Both are considered added sugar, however, the added sugar is minimal and adds the sweetness but isn’t overpowering.

How To Make These Peanut Butter Bites

One bowl, 5 ingredients, 6 if you use the vanilla. The hardest part is measuring out the peanut butter. Seriously, they’re that easy. I hope you find this recipe doable and have it in your refrigerator/freezer at all times. They provide energy and also satisfy the sweet tooth all at the same time.

  1. Mix: In a medium bowl, combine peanut butter, almond flour, date syrup, vanilla, and powdered milk. 
  2. Stir: Mix together well until the mixture starts to form a consistency similar to cookie dough.
  3. Add: Fold in the chocolate chips.
  4. Scoop: Out the mixture with a cookie scoop.  Refrigerate and/or freeze.  Enjoy!

Ingredients

  • 1/2 cup peanut butter, natural
  • 1/2 cup almond flour
  • 1/2 cup powdered milk
  • 1/3 cup mini chocolate chips
  • 3 tablespoons date syrup

Instructions

  1. Combine peanut butter, almond flour, date syrup, vanilla, and powdered milk in a large bowl. 
  2. Mix together well until the mixture starts to form a consistency similar to cookie dough.
  3. Add the chocolate chips and fold in.
  4. Scoop out with a cookie scoop.  Refrigerate and/or freeze.  Enjoy!

Notes

*You can switch the peanut butter out for cashew butter.

*Additionally, you can use collagen instead of the powdered milk.

*Date syrup is a natural form of sugar, however, it is still considered as an added sugar here.  You can use maple syrup instead if you have that on hand.
