Thanksgiving is starting to sneak up on us! With just over two weeks to go, the question is, have you planned your menu yet? Suffice it to say I have not since my master’s is still consuming me; however, I’ll start planning with my mom soon! There is still time to create a killer menu for your Friendsgiving/Thanksgiving celebration, and today, I’m excited to share an appetizer that is perfect for your holiday table! This appetizer is anything but boring; it is full of flavor! These Mushroom Polenta Bites will be your favorite ‘new’ recipe of the year!

What’s the one dish non-negotiable for your holiday menu every year? For me, a traditional holiday table wouldn’t be complete without a sweet potato casserole. Served as a side dish but almost always eaten as a dessert. It’s perfectly flavored with cinnamon and a dash of nutmeg and then topped with an irresistible pecan/cornflake/brown sugar topping. Promise this is the only sweet potato casserole recipe you’ll ever need. And even though I don’t normally recommend trying a new recipe before a get-together, these mushroom polenta bites will be a keeper!

Ingredients: Mushroom Polenta Bites

  • Mushrooms: I used baby bella mushrooms, but feel free to use your favorite mushroom in this dish!
  • Polenta: The pre-cooked polenta log is the way to go! Already cooked and easy to slice, these will sauté up and be easier to prepare than homemade polenta.
  • Parmesan Cheese: Parmesan tends to be more mild and allows the mushrooms to shine. However, you could use Parmesano Reggiano as well.
  • Lemon: This helps to make the flavors pop. Microwave the lemon for 20 seconds to help the lemon create more juice. I only used 1/2 the lemon.
  • Scallions: While this can be seen as just a garnish, the scallions help provide more flavor. Chives are also an option.

How To Make Mushroom Polenta Bites

  1. Cut one 18-ounce package of polenta into 12 rounds (1/3-inch thick).
  2. Heat a few tablespoons olive oil in a large non-stick skillet over medium-high heat.
  3. Sauté the polenta until golden on both sides and remove from the skillet.
  4. Lower the heat to medium and add 16-ounces sliced mushrooms to the oil remaining in the pan.
  5. Sauté until tender, 6-8 minutes.
  6. Drizzle in one tablespoon of olive oil and the juice of 1 lemon.
  7. Top each polenta round with a small pile of mushrooms and a pinch of minced scallions.
