- 1 1/2 cups almond flour (not meal)
- 2 eggs, lightly beaten
- 1/2 cup mashed banana, ~1 1/2 bananas (measured 246 grams)
- 1 teaspoon baking powder
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/8 teaspoon salt
- Frosting: your choice
Instructions
- Preheat: The oven to 350°F and spray three 4-inch springform pans with cooking spray. Alternatively you could line the pans with parchment paper. Set aside for later.
- Mix wet ingredients. First, mash your banana. Next whisk your eggs. Then add the mashed banana and vanilla to the bowl of whisked eggs. Stir until combined.
- Add the dry ingredients. Add the almond flour, cinnamon, baking powder, and salt (if using) to the wet ingredients. Stir until just combined.
- Bake: divide the cake batter, ~172 grams, evenly between the pans and bake for 20 minutes or just until the tops of the cakes start to brown and/or a toothpick inserted comes out clean.
- Cool: remove the cakes from the oven and let cool for 10-20 minutes in the pans before carefully removing them from the pans to cool completely on a wire rack. Remember, they can easily crumble/smash, so be careful!
- Decorate: after the cake has cooled completely, add your favorite frosting and decorations. Serve on a cake stand and watch your little one ENJOY!
