How to make a smash cake for your baby’s first birthday party. This cake is super moist, easy to make, and will definitely ‘smash’ easily! Made with almond flour and naturally sweetened with mashed banana. This smash cake is perfect for your baby’s first birthday celebration!

Ingredients

  • 1 1/2 cups almond flour (not meal)
  • 2 eggs, lightly beaten
  • 1/2 cup mashed banana, ~1 1/2 bananas (measured 246 grams)
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon salt
  • Frosting: your choice

Instructions

  1. Preheat: The oven to 350°F and spray three 4-inch springform pans with cooking spray. Alternatively you could line the pans with parchment paper. Set aside for later.
  2. Mix wet ingredients. First, mash your banana. Next whisk your eggs. Then add the mashed banana and vanilla to the bowl of whisked eggs. Stir until combined.
  3. Add the dry ingredients. Add the almond flour, cinnamon, baking powder, and salt (if using) to the wet ingredients. Stir until just combined.
  4. Bake: divide the cake batter, ~172 grams, evenly between the pans and bake for 20 minutes or just until the tops of the cakes start to brown and/or a toothpick inserted comes out clean.
  5. Cool: remove the cakes from the oven and let cool for 10-20 minutes in the pans before carefully removing them from the pans to cool completely on a wire rack. Remember, they can easily crumble/smash, so be careful!
  6. Decorate: after the cake has cooled completely, add your favorite frosting and decorations. Serve on a cake stand and watch your little one ENJOY!
