It was 55˚ yesterday and a warm breakfast never sounded better. There are a few recipe variations for overnight oats on the blog. Apple pie overnight oats might be my favorite. Overnight oats are best enjoyed cold and here in Miami they normally fit the bill. With an 8-mile run this morning in this cool weather it felt great. Afterwards I always fuel up and the warm oats were calling my name!
Early on in quarantine baked oatmeal was ‘trending’ on Tik Tok. I tested a few recipes and enjoyed it for awhile and then forgot about. Rarely does it get cool enough for me to want warm oatmeal here in Miami. But today was the day! The recipe has been re-tested and I have to say it’s great because you can actually eat this cold too if you wanted. Win win if you ask me!
Ingredients: Baked Blueberry Oatmeal
Oatmeal is super healthy. When we start adding sugar, honey or syrups, it can be high in added sugar. Mashing a banana adds natural sweetness. Yes, the banana does have carbs but there is no actual added sugar. Use fruit to enhance sweetness naturally and it adds in fiber!
- Rolled Oats: You want to use rolled oats here. Instant oats will be mushy and steel cut won’t cook in this amount of time. Rolled oats are inherently gluten free. However, some products do not have the label as they’re in a facility that processes other products that contain gluten.
- Egg: The egg not only adds a little protein, but also helps bind everything together. If you are vegan, you can use a flax egg instead.
- Banana. Mashing a banana and adding it to the mix adds natural sweetness instead of using actual sugar.
- Applesauce: Adds natural sweetness, but additionally it will help to keep the oatmeal moist, which we actually want (vs getting too dried out).
- Milk: This is a personal choice. Use whatever milk you have on hand! I used skim milk.
- Baking Powder: Helps the oats rise just a tad and not be too flat.
- Grapeseed Oil: Use a neutral oil here. I used grapeseed, you could also use canola or coconut. If you’re wondering if you need to add the oil, I’ve by accident left it out and it still turned out! It helps to emulsify the egg with all the ingredients and ultimately plays a role in binding all the ingredients together.
- Cinnamon/Vanilla: Flavor enhancers that are a must, but feel free to use a dash of cardamom, nutmeg, or whatever spices you like best!
- Blueberries: Frozen or fresh work. Having frozen fruit on hand is great when it’s not in season.
How To Make Baked Blueberry Oatmeal
Baked Blueberry Oatmeal is super simple and leaves your house smelling amazing! A little preparation today leaves you ready for the week with a few leftovers!
- Preheat the oven: Preheat the oven and grease an 8×4 baking dish with non-stick cooking spray.
- Mix all the dry ingredients: Combine the oats, cinnamon, and baking powder in a large mixing bowl.
- Mix all the wet ingredients: Mix the milk, applesauce, grapeseed oil, egg, mashed banana, and vanilla extract.
- Mix all together. Add the milk mixture to the oat mixture. Stir well. Add in the blueberries. Pour the oatmeal mixture into the prepared pan.
- Bake: Bake until the oatmeal is set and golden brown, ~25-30 minutes.
- Cool: Let the oatmeal cool for 5 minutes before serving, otherwise it will easily crumble.

Ingredients
- 1 1/2 cups rolled oats
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 cup milk, your choice
- 1 egg, lightly beaten
- 1 banana, mashed
- 1 teaspoon vanilla extract
- 1/4 cup applesauce, unsweetened
- 1 tablespoon grapeseed oil
- 2/3 cup blueberries
Instructions
- Preheat the oven to 350˚F and grease an 8×4 baking dish with non-stick cooking spray.
- Combine in a large mixing bowl the oats, cinnamon, and baking powder.
- Combine in a medium bowl the milk, applesauce, grapeseed oil, egg, mashed banana, and vanilla extract.
- Add the milk mixture to the oat mixture. Stir well. Add in the blueberries. Pour the oatmeal mixture into the prepared pan.
- Bake until the oatmeal is set and golden brown, ~25-30 minutes.
- Cool – let the oatmeal cool for 5 minutes before serving, otherwise it will easily crumble.
