- 1 1/2 cups rolled oats
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 cup milk, your choice
- 1 egg, lightly beaten
- 1 banana, mashed
- 1 teaspoon vanilla extract
- 1/4 cup applesauce, unsweetened
- 1 tablespoon grapeseed oil
- 2/3 cup blueberries
Instructions
- Preheat the oven to 350˚F and grease an 8×4 baking dish with non-stick cooking spray.
- Combine in a large mixing bowl the oats, cinnamon, and baking powder.
- Combine in a medium bowl the milk, applesauce, grapeseed oil, egg, mashed banana, and vanilla extract.
- Add the milk mixture to the oat mixture. Stir well. Add in the blueberries. Pour the oatmeal mixture into the prepared pan.
- Bake until the oatmeal is set and golden brown, ~25-30 minutes.
- Cool – let the oatmeal cool for 5 minutes before serving, otherwise it will easily crumble.
