The dog days of summer are coming to a close. It’s Labor Day Weekend and while the temperatures are still quite hot and humid here in Miami, the weather report shows that in Denver it’ll be in the 30s this next week. How’s that for wacky weather? It’s the year 2020 and nothing can surprise me any more.
Since it is hot and humid here in Miami, hydration is critical. And while I’m all about drinking my water and eating my fruits and vegetables, every so often I want a homemade popsicle. I made watermelon popsicles earlier in the summer and those are tasty. Watermelon has such a high percentage of water, so these popsicles taste like they’re literally frozen watermelon – refreshing and just what you need on a hot summer day.
I started experimenting with other fruits. I had an abundance of blueberries one week (thanks to my #daddeliveries) and decided to blitz them up with a little water and just a hint of simple syrup. Let me tell you. One of the best popsicles to date. And while I haven’t tried this ratio with other fruits, my guess is that it’d work too. For now, I’m hooked on these blueberry popsicles.
Who would think that with just 3 simple ingredients you’ve got yourself a homemade popsicle. Sure I have actual popsicle molds, but don’t let that stop you from making these. Grab yourself some paper cups & popsicle sticks and you TOO can have these blueberry popsicles. Can you tell I want you to make these? Seriously, make ‘em before it gets too cold in your neck of the woods. Because next summer is just too long to wait.

Blueberries, water, and mint simple syrup. That’s it! Refreshing, hydrating, & just what you need to make for homemade Blueberry Popsicles!

Ingredients
- 1 cup blueberries (~6 ounces)
- 1/2 cup water
- 2–3 tablespoons mint simple syrup
Instructions
- Blend the blueberries, water, and mint simple syrup.
- Pour or spoon the blueberry mint mixture into popsicle molds and freeze until solid (4 hours or more). If using popsicle sticks, insert the sticks when the popsicles are partially frozen. Makes ~4 blueberry popsicles.
Notes
*I used 1/2 cup water to dilute the blueberries just a bit. If you use just ¼ cup of water, it will only make about 3 popsicles. I think the ½ cup water works well to give you 4 popsicles. Because you’re diluting them, start with 2 tablespoons of the mint simple syrup and see if it’s to your liking of sweetness level. And then add one tablespoon at a time until they’re sweet enough. I used 3 tablespoons total.
*I haven’t made these with frozen blueberries. Because they are frozen, you might need a tad less water. If you give these a try with frozen blueberries, let me know (& if I finish these up, I’ll give it a whirl!)
*You can always add in a tablespoon of lime juice, extra mint – you do you! The key is cool, refreshing, and thirst quenching! Enjoy!
