- 1/2 cup 60% dark chocolate chips
- 4 mandarins, peeled, in segments
- 1/4 cup shelled, unsalted, pistachios, finely chopped
- 1 1/2 teaspoons coconut oil
Instructions
- Place chocolate and coconut oil in a small bowl set over a pan of simmering water.
- Cook, stirring occasionally, until just melted, 1 to 2 minutes. Stir until smooth.
- Peel pistachios, finely chop and place in a separate bowl.
- Remove pan from heat but keep the bowl over the hot water. Dip mandarin segments halfway into the chocolate; arrange on a serving plate covered with parchment paper.
- Sprinkle chocolate halves with crushed pistachios.
Notes
*If you wanted to leave the pistachios off, you could. You could also sprinkle some sea salt instead and that would also be a great (less work) option!
