- 1–12 oz package fresh cranberries
- 2/3 cup sugar (this is 1/3 less than the normal 1 cup)
- 1/2 cup apple cider (or other fruit juice. Today I used pomegranate and it was delish!
- 1 vanilla bean, split (and if you don’t have vanilla beans, use at least 3 tsp vanilla extract)
Instructions
- Combine the cranberries, sugar, juice, and split vanilla bean in a saucepan over medium-low heat. Stir the ingredients together.
- Bring the mixture to a simmer and let it bubble and simmer for about 10 minutes, until the cranberries begin to break down and the mixture thickens.
- Remove it from the heat and let it cool to thicken even more.
- Re-heat this to serve it or keep it in the fridge to cool until you’re ready to eat!
