Homemade Fudge Popsicles

Homemade Fudge Popsicles without a pudding mix! These fudge popsicles are the perfect cold treat on a hot summer day. The hardest part is waiting for them to freeze, but the payoff will be delicious.

Ingredients

  • 1 cup whole milk, at room temperature
  • 2 tablespoons unsweetened cocoa powder, sifted
  • 1/3 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1/8 teaspoon salt
  • 1 ounce dark chocolate, chopped
  • 1/2 teaspoon vanilla

Instructions

  1. Mix. In a medium saucepan mix the milk, sugar, cocoa powder, cornstarch, and salt together over medium-heat.
  2. Warm the mixture till hot, but not boiling.  Your goal here is to make sure everything is all stirred together and the sugar dissolves. The key is to not let the milk get too hot and boil.
  3. Whisk together until the mixture starts to thicken and is smooth.
  4. Add the chopped chocolate.  It will melt fairly quick, but keep stirring until the mixture is thickened, about 1-2 minutes more.
  5. Remove from the heat and add the vanilla in.  The mixture is thick but still able to be poured.
  6. Pour the mixture into your popsicle molds. With the molds I have I was able to get 4 popsicles. If you use a different size, like the paper cups, you might be able to get a few more. I really should just double this recipe!  The recipe button at the top lets you increase!
  7. Place your sticks in the popsicle mold.  I add the stick but don’t let it go all the way to the bottom – to ensure I have a long enough stick to hold onto!  Freeze until firm, about 4-6 hours.
