- 1 can (15-ounce) chickpeas, low-sodium or no added salt OR make them homemade
- 3 tablespoons extra-virgin olive oil
- 2 tablespoons red wine vinegar
- 2 tablespoons fresh basil, julienned
- 2 tablespoons fresh parsley
- 1 garlic cloved, minced
- 1 teaspoon honey, *optional
- 1/4 teaspoon black pepper
- 1/8 teaspoon red pepper flakes
Instructions
- Place your chickpeas in a large bowl.
- Whisk in a small separate bowl the olive oil, red wine vinegar, garlic, basil, parsley, black pepper, red pepper flakes, & honey (if using).
- Pour the marinade over the chickpeas. Minimal time to marinate, 30 minutes. If you have longer, the more flavor they’ll have.
- Eat and enjoy! Enjoy them in my salad in the jar, simply throwing over a bed of greens, and even adding them to a grain bowl!
