- 2 cups Greek yogurt, full-fat
- 2 teaspoons vanilla
- 4 ripe peaches
- 1 tablespoon honey
- 2 tablespoons fresh mint
- 1 peach sliced thin
Instructions
- Blend – in a blender, blend the yogurt, vanilla, 4 ripe peaches, honey, and mint.
- Cut the peach in half and remove the pit. Thinly slice each half into thin slices. Place a few slices into each popsicle mold. (this is optional but I highly recommended!)
- Divide the peach mixture among the plastic popsicle molds evenly. Leave a little room at the top for expansion. Cover the mold and insert wooden craft sticks.
- Freeze the popsicles until they’re completely firm and the sticks are set, about 6-8 hours. To remove the popsicles, run the outside of the mold under hot water for a few seconds. This will help the popsicles to release a bit easier.
