- 1 pound pizza dough
- 4 ounces mozzarella cheese, fresh
- 2 ounces goat cheese
- 1/4 cup pesto
- 2 cups mixed greens
- 1 tablespoons olive oil
- 1/2 tablespoon red wine vinegar
- 1/8 teaspoon black pepper
Instructions
- Preheat the oven to 450 degrees F. Grease a large baking sheet with olive oil.
- Roll – on a lightly floured surface, roll the pizza dough out until it is pretty thin (about a 10-12 inch circle). Transfer the dough to the prepared baking sheet. Spread the dough with pesto and top evenly with mozzarella and goat cheese.
- Transfer to the oven and bake for 10-15 minutes or until the crust is golden.
- Whisk – meanwhile, in a medium bowl, whisk together the olive oil, red wine vinegar, and black pepper. Add the mixed greens and toss to combine.
- Remove the pizza from the oven and top with the mixed greens. Enjoy!
Notes
*There are so many pizza variations out there! I went with a white pizza here and used pesto as the ‘sauce’. If you’re not a fan of having the greens ON the salad, I encourage you to have some salad with your pizza. Or a nice veggie platter to munch on during the game. Glad it’s football season again!
