My go-to cooked kale recipe.  Simple, yet flavorful.  Make some tonight!

  • Total Time: 10 minutes
  • Yield: 3 1x

Ingredients

Units Scale
  • 1 bunch kale, lacinato and/or curly
  • 2 tablespoons olive oil
  • 2 garlic cloves, finely sliced
  • 1/2 cup vegetable broth
  • Salt and pepper, to taste
  • 2 tablespoons red wine vinegar

    Instructions

    1. Heat olive oil in a large saucepan over medium heat.
    2. Add the garlic and cook until soft – you want it softened but not browned.  Raise the heat to high, add the stock and kale and mix to combine.
    3. Cover and cook for 3 minutes and up to 5 minutes (if your bunch of kale is large).
    4. Remove cover and continue to cook, until all the liquid has evaporated.
    5. Add vinegar.  Season with salt and pepper to taste.
