Summer is officially 2 weeks away. But the heat has been ON this past week in Miami! Enter this Watermelon, Mint, and Feta Salad. Refreshing. Hydrating. & one of the better combos out there! Sure, watermelon by itself is hydrating and refreshing, but there’s just something about combining it with mint – it really draws out the flavor (even more so!) & add feta and it’s like the saying goes, ‘everything is betta with feta.” Am I right?

I’m still on the ‘support local’ bandwagon and have been eating out at least once/week from different restaurants in the area. I live close to Wynwood and have been meaning to try out 1-800 Lucky for the longest time, like before the pandemic, and then well, pandemic. But boy am I glad I finally was able to! Wynwood is known for all the art around the area but it’s also now the home of many great restaurants too. Great for an afternoon of walking around, albeit a scorcher, but there’s always something fun to see and of course good eats.

Lucky for me on my drive home I passed by a local selling watermelons on the roadside. I was going to stop because I wanted a watermelon, but what really drew me in? His yellow watermelon! Have you ever seen or tried one before? It’s not often that I come across them as they are not as common. Truth be told the red ones are sweeter, but there’s just something to be said for ‘eating the colors’ and this yellow does give you beta carotene! I think that’s why fruits and vegetables always amaze me. So when I saw the yellow watermelon, I knew I had to have one (In case you were wondering that’s the yellow in my watermelon, mint, and feta salad!

He had a very appealing stand too – just look at that cut!

Ingredients: Watermelon, Mint & Feta Salad

  • Watermelon – Summer screams watermelon. Sweet, juicy, & hydrating. I considered myself lucky to find a yellow variety.
  • Feta – Doesn’t need a lot, just a tablespoon per serving, but that little goes a long way for flavor!
  • Mint – Using fresh herbs whenever I can adds a pop of flavor. The extra mint I used to flavor my water. Aiming to reduce my food waste.
  • Extra ingredients – other recipes add in jalapeno, cucumber, red onion – feel free to add in more. I went with the less is more approach and I’m here to say it did not disappoint.
  • Lemon Vinaigrette – 3 parts extra-virgin olive oil, 1 tablespoon fresh lemon juice. Shake and it will emulsify. I didn’t add in any vinegar here, but if you did, I’d do 2 tablespoons olive oil, 1 tablespoon champagne/red/white vinegar, and the juice of 1 lemon.

Watermelon, Mint, & Feta Salad

Refreshing.  Hydrating.  The perfect go-to summer salad when watermelon is in season.  And if you dare to add jalapeño for some more heat, have at it.  We have enough sweat here in Miami thank you very much!

Ingredients

Units Scale
  • 4 cups seeded watermelon, cut into 1-inch chunks
  • 1 tablespoon lemon juice
  • 3 tablespoons extra-virgin olive oil
  • 1/4 cup roughly chopped mint leaves
  • 1/4 cup feta cheese

Instructions

  1. Whisk together in a small bowl the olive oil and lemon juice.
  2. Combine in a large serving bowl the watermelon, feta, and mint. 
  3. Pour over dressing, tossing to combine. 
  4. Garnish with more mint.

Notes

*Other ingredients you can add in if you please:  cucumber, red onion, jalapeño.

*Additionally, you can serve this over a bed of mixed greens or arugula.

  1. Watermelon, mint, and feta really are a classic flavor combination. Love adding cucumber sometimes too!
