Watermelon, Mint, & Feta Salad

Refreshing.  Hydrating.  The perfect go-to summer salad when watermelon is in season.  And if you dare to add jalapeño for some more heat, have at it.  We have enough sweat here in Miami thank you very much!

Ingredients

Units Scale
  • 4 cups seeded watermelon, cut into 1-inch chunks
  • 1 tablespoon lemon juice
  • 3 tablespoons extra-virgin olive oil
  • 1/4 cup roughly chopped mint leaves
  • 1/4 cup feta cheese

Instructions

  1. Whisk together in a small bowl the olive oil and lemon juice.
  2. Combine in a large serving bowl the watermelon, feta, and mint. 
  3. Pour over dressing, tossing to combine. 
  4. Garnish with more mint.

Notes

*Other ingredients you can add in if you please:  cucumber, red onion, jalapeño.

*Additionally, you can serve this over a bed of mixed greens or arugula.
