Watermelon Popsicles

Hydration via Watermelon popsicles.  Watermelon, lime juice, mint, and water.  That’s it!  Watermelon Popsicles to cool you down.  And with this summer heat, you’re going to need it!

Ingredients

  • 4 cups cubed watermelon
  • 1 tablespoon freshly squeezed lime juice
  • 1 tablespoon mint syrup, optional*

Instructions

  1. Blend the watermelon, lime juice, and mint syrup in a blender.
  2. Pour the mixture through a fine sieve into a bowl, pressing the fibrous melon with the back of a spoon to extract the maximum amount of juice.
  3. Pour or spoon the juice into popsicle molds and freeze until solid.  If using popsicle sticks, insert the sticks when the popsicles are partially frozen.  Makes ~8 popsicles.

Notes

*I used strawberries (1 lb) previously and the added sugar is really up to you as to how much you want to add in – it depends on how sweet the fruit is as well as how sweet in taste you like them. With my strawberry ones I didn’t add sugar at all. With this watermelon one I did as it was not sweet at all. I always start with one tablespoon and then add an additional one and taste in between to see if it needs more.

*The lime juice really makes the watermelon flavor pop.   You can always add a little additional if you like. Some fruits pair better with lemon, but in this case, watermelon goes great with lime!

*If I have extra mint leaves (that I’ve bought for the week) I’ll add actual mint into the blender. vs just the mint syrup. I like mint with watermelon – and again, because this watermelon was not the greatest, more mint could’ve really helped improve the flavor.
