Peaches and Cream, Popsicle-Style! Peaches, yogurt, mint, and honey. That’s it! Creamy, refreshing, & delicious. Make these peach popsicles before the peaches & summer are all gone!

Fall Flower Bouquet

Tomorrow is Labor Day. & it’s currently 91˚ here in Miami. And while the pumpkin and apple recipes are starting to surface, I’m hanging on to summer for a couple more weeks. But I did buy a fall flower bouquet to be a bit festive!

And while Labor Day does signal the end of summer and starts to show the signs of fall, I wanted to sneak one more popsicle recipe in. I made the blueberry popsicles and the watermelon popsicles this summer which were all just fruit and they are delicious. But I wanted to experiment with yogurt and see if they would give a ‘creamy’ effect. And guess what? They sure did! Make sure to make some before the peaches are gone and summer’s officially over.

Peach Popsicles

  1. Peaches – Ripe peaches. Many times when you’re using peaches in a recipe you want them firm but ripe. For this recipe, you actually want them super ripe, just make sure it’s before they turn too mealy and mushy! Not to mention it’s a great way to use up any less than perfect fruit.
  2. Honey – If your peaches are super sweet, you might be able to get by with using less honey. Less honey means less added sugar, which is always a good thing. Just keep in mind that there isn’t a liquid we’re adding to this recipe, so you do need the yogurt and peaches to blend up and not be too thick. I wouldn’t recommend adding water, but instead of the honey I have used either agave or simple syrup. Still added sugar, but a bit of a thinner consistency than honey, which helps to blend everything all up!
  3. Greek Yogurt– I used full-fat Greek Yogurt. Yes, I am a dietitian and yes, I’m recommending full-fat yogurt. Here’s the reason why: food science. If you use a low-fat yogurt you will get icier popsicles. There’s science behind some of these recipes. Not to mention, this is a dessert. I keep my desserts as desserts and don’t try to ‘healthify’ them. I try to teach that all foods fit and aim to include vs exclude desserts. We can talk about this more in another post, just comment below if this is something you’re interested in!
  4. Vanilla and Mint – I chose to use mint as the herb here, but I’ve seen peaches paired with basil and that could be interesting to try! Vanilla is always a nice addition to desserts. Subtle but flavorful.

How To Make Peach Popsicles

Making homemade popsicles is a fun and easy activity to do with kids plus, who doesn’t love a popsicle on a hot summer day?! These really couldn’t be any easier to make and don’t require a lot of ingredients. The hardest part? Waiting for them to set 6-8 hours.

  1. Process all the ingredients: Process the Greek yogurt, 4 peaches, vanilla, mint, and honey in a blender or food processor until completely smooth, about 1 minute.
  2. Slice the Peach: Cut the peach in half and remove the pit. Thinly slice each half into thin slices. Place a few slices into each popsicle mold (this is optional but does give a nice presentation).
  3. Pour mixture into popsicle molds: Divide the peach mixture among the plastic popsicle molds evenly. Leave a little room at the top for expansion. Cover the mold and insert wooden craft sticks.
  4. Freeze popsicles: Freeze the popsicles until they’re completely firm and sticks are set, about 6-8 hours. To remove the popsicles, run the outside of the mold under hot water for a few seconds. This will help the popsicles release a bit easier. Serve and enjoy!

Ingredients

Units Scale
  • 2 cups Greek yogurt, full-fat
  • 2 teaspoons vanilla
  • 4 ripe peaches
  • 1 tablespoon honey
  • 2 tablespoons fresh mint
  • 1 peach sliced thin

Instructions

  1. Blend – in a blender, blend the yogurt, vanilla, 4 ripe peaches, honey, and mint.
  2. Cut the peach in half and remove the pit.  Thinly slice each half into thin slices.  Place a few slices into each popsicle mold.  (this is optional but I highly recommended!)
